On Friday I had some spare time so we decided to head up to Camden and have lunch at one of my favourite places the Inspiral Cafe. According to their website “inspiral is a visionary concept bringing together raw vegan health products, and optimum nutrition vegan cafe (running on green energy) and an uplifting arts/music/events venue with organic bar …”
With a completely vegan menu with many products raw and gluten free I love to visit Inspiral for a not so naughty treat. I had the gluten free lasagne with a side of greens, potato wedges and mung bean Dahl, oh my was it good! So good in fact I forgot to take a picture before digging in! My boyfriend had the lentil burger and found it to big to finish, this is the man who managed to get through Byron’s ‘Triple Cheesemas’ with relative ease. It just goes to show that a vegan diet can be just as tasty and satisfying, if not more so, than a meat based meal.
Inspiral are also the British pioneers in Kale Chips and have a variety of different flavours which are available from their online store (I’ll leave a link below).

So I have recently done a running jump on to the green smoothie bandwagon and boy am I glad I did. I try and have one every morning as part of my breakfast and then sometimes later on as a mid afternoon/evening snack.
They are a great way of getting some of your five a day (or how ever many it is now). I like to include a handful of spinach or broccoli, sometimes both, in each smoothie as an extra nutrient boost. I know that veggies in a smoothie may sound awful to some but once I have packed it with all the fruits I can’t even taste them. This is also great sneaky way of getting kids to eat more veg!
My current favorite combination is as follows –
1 cup coconut water
1 handful spinach
the juice of 1 lime

We all need to drink more water. It’s a fact. I know I am a water snob, I don’t like drinking tap water because of the taste. But then I can’t afford and don’t want to be constantly buying bottle of water.
I first heard an out the Water Bobble from a friend who said it had really helped her to make more of an effort to drink more water so I couldn’t wait to get one myself. According to the website, the Bobble claims to Make water better and I can honestly say it does. I find I am not constantly turning to juice or squash when I am thirsty but I am enjoying fresh water from the tap. Although you do have to buy replacement filters, the site recommends every 2 months, this is much more cost effective and better for the planet than all those plastic bottles.

Overall I think this is a really good product. The shape of the bottle is great for exercising and drinking on the go due to the shapely design and I love the colour range of the filters.
As I said last week, I am keen to change my eating habits in order to improve my overall well being. Part of cleaning up my diet meant trying to boost my metabolism so I decided to do some research into metabolism boosting foods. I found lots of lists of things one should eat in order to boost your metabolism but I wanted to check with a friend who is keen on nutrition,and who’s mother runs ‘The Juice Clinic on the island of Guernsey (see link at the end of this post) just to make sure I was being told the correct information. It turns out that the most effective way to boost your metabolism is to cut out carbohydrate after lunch. So that’s what I have been doing.
So far so good. This change in my diet has been great for two reasons. Firstly it means I have been having more of a ‘main meal’ at lunch time, therefore eating something lighter in the evenings – something we are constantly told to do. Plus it has meant my boyfriend and I have had to be a bit more creative with our cooking. It is very easy to fall into the rut of focussing your evening meal around pasta, rice or potatoes so by cutting these out we have had to try different and more interesting meals. Win win.
With this in mind this evening I decided I would try to make a no carb apple crumble, and my word was it good. I simply substituted the usual crumble (carby) topping for a mix of ground almonds and chopped hazel nuts. I did use butter to combine these two so it was not strictly low in fat, but it am keen to try this again substituting the butter for a lower fat option.
Tonight I am one happy bunny. I can still enjoy a sweet treat, but in a satisfyingly low carb fashion!

One of the main inspirations behind me getting fit is to improve my physical strength. I am fed up of being a ‘little woman’ and I want to be strong and toned.
These pictures show very strong women and I am focused on improving my core strength so that one day I will be able to hold a yoga pose like that with ease.
Well once again I seem to have neglected this blog for far to long. To be honest the last few months have been mad (in more ways than one) and this place completely slipped my mind. So I have decided to change the format of my blog slightly. I have several New Years resolutions which all centre around me getting fitter and healthier both physically and mentally and I have decided that this will be the place where I document how I am doing, my inspiration and all elements of my journey.
I am not going on some fad diet, I am changing my life style so that I can lead a healthier and happier life.
So today I am moving back down to London and begin my final year as an undergraduate student, scary stuff!
To celebrate this I am very tempted to treat myself to a new backpack. I love backpacks, they are great for just shoving everything into and practical as I travel to an from work on my bike, plus it has birds on it! Love it!
